5-Minute Salsa

Salsa is one of my favorite things to have for a snack. My kids have also started consuming copious amounts of salsa, which means we seem to run out all the time. I started making this salsa recently because I was tired of not having salsa. It's made with a can of tomatoes, onion, jalapeno, and cilantro and only takes 5 minutes to make. I love making it to go with breakfast tacos or smoked chicken enchiladas.

Kids & Cooking

My son, Sully, actually made this whole batch himself, while I was working on dinner. He really wanted some salsa, and I had finished the last of the jar before dinner :)

Ingredients

  • 28oz can of diced tomatoes

  • 1/2 of a red onion

  • 1-2 jalapeno

  • handful of cilantro

  • 1/4 cup distilled white vinegar

  • 1/2-1 tsp salt

Step 1

Place tomatoes in a blender or food processor. Roughly dice the onion and add to the tomatoes. Finely dice jalapeno (For mild salsa, remove seeds and start with 1/2, for spicy leave the seeds and go for both!) and add to the tomatoes and onion. Add cilantro, vinegar, and salt. Pulse a few times.

Step 2

Grab some chips and start tasting. At this point, you can add more salt, jalapeno, etc. to suit the salsa to your tastes.

Taste & Adjust

Sully went for spicy on this batch! Two jalapenos, seeds and all.
