Banana Oat Chocolate Chip Bars
We try to avoid processed foods as much as possible. With six kids and lots of friends, someone is always looking for a snack. These banana oat chocolate chip bars are low in sugar and full of oats and bananas, while being a fun, tasty snack for hungry kids. They come together quickly in one bowl, and they can easily be doubled and frozen for a rainy day!
Ingredients
1 Cup Mashed Bananas (Preferably the old, browning ones, 2-3 depending on size)
2 Eggs
1 Tsp Vanilla Extract
1/4 Cup Melted Butter (slightly cooled)
1/3 Cup Brown Sugar or Maple Syrup
1/2 Tsp Salt
1/2 Tsp Baking Powder
1/2 Cup Whole Wheat Flour
1.5 Cups Rolled Oats
1/2 Cup Mini Chocolate Chips
Step 1
Preheat oven to 350 degrees. In a medium-sized bowl, mash bananas thoroughly. Add eggs and vanilla, and mix well. Add melted butter.
Step 2
Add salt and baking powder to wet ingredients, and stir until all the way mixed in. Add flour, oats, and mini chocolate chips and stir.
Step 3
Spray an 8 x 8 baking dish with cooking spray or line with parchment paper. Pour batter into pan. Bake for 20-25 minutes or until golden brown.

Feed to hungry children!
