Rosemary Biscuits

 

Easy, delicious biscuits you don't have to feel guilty about eating. They are easy enough to be made on a lazy Sunday morning, quick enough to be made for a weeknight dinner, and fancy enough to be served for company. 


Ingredients

  • 2 Cups of All-Purpose Flour

  • 2 TBSP Baking Powder

  • 1 Tsp Salt

  • 1-2 TBSP Sugar, Maple Sugar, Brown Sugar, or Coconut Sugar

  • 1-2 Tsp Finely Chopped Fresh Rosemary

  • 5 TBSP of Very Cold Butter

  • 3/4-1 Cup of Buttermilk

Step 1

Place butter in the freezer. The whole stick or 5 TBSP of the stick. Preheat oven to 425. Pour buttermilk into a measuring cup. Measure dry ingredients into a bowl and mix thoroughly with a wooden spoon.

Step 2

Remove butter from the freezer. Take off the butter wrapper. Use a cheese grater and grate butter into the dry ingredients. Use hands and gently work the butter into the dry ingredients, breaking up clumps.

Step 3

Stir-in 3/4 cup of buttermilk. Mix dough with spoon or hands until dough comes together. You may need to add more buttermilk, but remember you can always add more, but not take it away. Dough should be dry enough to pat into a 1 inch tall rectangle, but not crumbling apart. Cover with a tea towel and let dough rest for 20-40 minutes. (If you are in a time-crunch, you can rush through the rest period. Sometimes there are children melting down, and one may only have 5 minutes to let the dough rest. They will still be tasty and enjoyed by the table.)

Step 4

Fold the dough over on itself, and pat it back into a rectangle. Repeat once or twice, ending with a 1-inch tall rectangle. Use your favorite biscuit cutter to cut out biscuits. Re-pat the remaining scraps and cut out until no scraps remain. (I like to do smaller biscuits if accompaining a meal. Larger biscuits can be turned into biscuit sandwiches. If you find yourself without a biscuit cutter, a knife to make square biscuits works just fine!)

Step 5

Brush biscuits with a bit of melted butter and honey or maple syrup (2 TBSP of Butter and 1 Tbsp of Honey/Syrup will suffice). Bake until golden brown or 12-15 minutes.
